Yields 7-8, 1-cup servings
 
Ingredients
  • 1 spaghetti squash large
  • 1 pound Italian sausage
  • 1 16 oz jar marinara sauce No added sugar or chemicals
  • 2 eggs
  • 1 cup grated Parmesan
  • 2-3 cups mozzarella cheese

Directions

  1. Poke several fork holes into spaghetti squash.
  2.  Place spaghetti squash in microwave on high for 20 minutes.
  3. Remove spaghetti squash from microwave. Cut squash in half lengthwise. Remove seeds.
  4. With a fork, shred spaghetti squash and place in colander. Place colander in a large bowl.
  5. Salt spaghetti squash. Place squash in refrigerator for 1 hour, in order for juice to be extracted..
  6. Place ground sausage in pan. Cook over medium heat until browned.
  7. Mix marinara sauce into cooked ground sausage.
  8. Remove cooked squash from refrigerator. Mix parmesan cheese and two eggs into spaghetti squash.
  9. Layer spaghetti squash, meat sauce and 1 cup mozzarella cheese in pie plate, ending with generous mozzarella cheese.
  10. Bake in 375 oven for 45 minutes.
