Brad Leighninger of Gettin’ Basted joined Daniel Shedd on Daybreak Tuesday morning to show you how to grill some al pastor tacos for your weekend barbecue! The recipe is below.
Take one pork butt, and thinly slice as many pieces appropriate to your serving size. Let the meat soak in a marinade for one or two hours. The marinade consists of:
1 cup of pineapple juice
2 chiles in adobo sauce
1/4 cup cider vinegar
3 cloves of garlic
1 small white onion, chopped
1 teaspoon of cumin
1 teaspoon of oregano
1 teaspoon of salt
Put all those ingredients in a blender, and let the pork marinate. Once marinated, cook pork on your grill for 5-10 minutes on each side.
While the pork is cooking, it’s time to cut your fruits. Take a pineapple and cut in circular pieces. Sprinkle seasoning salt on the pineapple pieces, and then add it to the grill for the about 3-5 minutes.
Remove the pineapple and pork. Chop both into smaller pieces, and put them on flour tortillas. Sprinkle with a lime wedge, and they are ready to serve. Enjoy!
