Boneless Hot Wing Bites
Season Flour

2 cup flour
1 T. salt
½ tsp. pepper

Wing Bites

1 lb. boneless skinless chicken breast or thighs diced into one inch pieces or smaller
1 cup light olive oil

Classic Hot Wing Sauce

8oz. Hy-Vee hot wing sauce or Franks BB-Q Hot Sauce
Optional - Dash of honey
2 T. olive oil
1 tsp. cumin powder
1 tsp. oregano
1 T. fresh garlic chopped
2 T. fine diced onion

Sweat the onions and garlic for a couple minutes in olive oil then add the rest of the ingredients bring to a simmer and remove from the heat

Wing Bite Cooking Instructions

Mix season flour together and dust diced chicken coating well then shake off any extra flour. They can be fried in a heavy skillet with ½ inch of oil that has been heated hot. Then brown on both sides for 3-4 minutes on each side. It will take a couple rounds in the skillet so hold the cooked ones on sheet tray in a warm oven. Make sure the bites cook all the way done 165 degree internal temperature. Once the chicken bites are done in a large mixing bowl toss them in your choice of sauce and cover them well until they are served.
