Toasted Caprese Sandwich

Here's a gourmet blend of grilled cheese sandwiches and Caprese salad. It's best made in summer, when tomatoes and basil are at their peak.

1 tablespoon garlic chopped
2 tablespoon olive oil
2 tablespoons butter melted
2 100% whole wheat bread Sarah Lee !00%
1 tablespoon dried rosemary
10 leaves fresh basil leaves chopped
3 tomatoes sliced
2 teaspoons balsamic vinegar (optional)
8 ounces fresh mozzarella cheese sliced


Mix oil, butter, chopped garlic in small bowl, set aside, for about an hour.

Brush the garlic mixture on 1 side of whole wheat bread with a BBQ or kitchen brush. Layer one slice with
mozzarella, basil and tomatoes. OPTIONAL: Drizzle tomato slices with balsamic vinegar. Top with remaining piece
of whole wheat bread. Brush top with garlic mixture.

Place on electric sandwich maker or indoor grill such as George Foreman grill and cook until the cheese has
melted, about 10 minutes.
