Ingredients:
Cumin Chicken
· 2 skinless, boneless chicken breasts
· Juice of 1 lime
· 1 Tbsp. ground cumin
· 1 tsp. sea salt
· 1 tsp. freshly cracked pepper
Greek Salsa
· 1 tomato, diced
· 1 bunch of cilantro (leaves only) finely minced
· Juice of 1 lime
· 2 cloves of garlic, finely minced
· 1 medium size English cucumber, diced
· ¼ cup of black or Kalamata olives, minced
· 1 tsp. onion powder
· ½ tsp. each sea salt and cracked pepper
· 1 Tbsp. extra virgin olive oil
Toppings
· 1 cup of feta cheese, crumbled
· 1 cup of plain Greek yogurt
· 1-2 Tbsp. of local honey
4 Pita bread, warmed

Preparation for Cumin Chicken

1. Place 1 chicken breast in a gallon size Ziploc bag and flatten to ½ in. thickness with mallet.
2. Add ½ of the lime juice and ½ of the sea salt and cracked black pepper, seal bag and allow to marinate for 10 min.
3. Repeat steps 1&2 for other chicken breast.
4. Remove chicken breasts from marinade and pat dry with paper towel.
5. Mix cumin salt and pepper together in a small bowl.
6. Coat each side of the chicken breast with the spice mixture.
7. Heat a skillet to medium and add 1 Tbsp. of olive oil.
8. Cook chicken breast 3-4 minutes on each side until chicken is cooked through.
9. Remove breasts and let them rest for 5 minutes before slicing into strips

Preparation for Greek salsa
1. Prep and mix all salsa ingredients together as indicated.

Preparation for remaining ingredients
1. Mix greek yogurt and the honey with a wire whisk until well blended.
2. Warm pita bread in a skillet for 1 minute per side.
3. Assemble taco in pita in and drizzle top with honey-yogurt cream. Enjoy!
