Professional BB-Q Chicken

Bone in chicken thighs with the bone removed
Sweet spicy BB-Q Rub
Wood chips or chunks soaked in water – fruit wood, nut, hickory, or other favorite smoking wood
1 cup sweet and spicy BB-Q sauce
1 large muffin pan

Season chicken with bb-q spice and place it in the muffin pan skin side up. Cook chicken in a gas or charcoal grill. In a charcoal light the charcoal on one side and for a gas grill light only the burners on one side or roast the chicken on the upper rack. The chicken needs to roast in the indirect heat. In the charcoal grill lay the wood chips directly over the coals. In the gas grill use a pie pan with holes punched in it placed on top of the gas element that is burning below the grill surface. In both grill methods try and keep the temperature around 300 degrees and replace the chips as needed for at least the first thirty minutes. The chicken will take about 40 to 50 minutes to cook. It will really vary on cook time depending on chicken size, grill temp, and grill type. The internal temperature between the thigh and legs needs to be 165 degrees and breast at 150 when chicken is done. When it is almost cooked all the way then cover in BB-Q sauce and turn the grill on high for 5-10 minutes to caramelize the sauce and crisp the skin.
