Eric Ford, the Executive Chef at Howard Johnson Hotel in Springfield, shares this luscious breakfast dish.


Rob Evans:      Once in a while, you find a dish that defies logic. It's breakfast, it's a desert, it's delicious. I tried a dish not too long ago, and we're joined by the man who allowed me to sample it, Eric Ford, the Executive Chef at Howard Johnson Hotel in Springfield. What is this?

Eric:     It's a french toast creme brulee. It's very easy, and I'll show you how to make it. You start with 30 egg yolks, not the whole egg, to make it more rich. You add in vanilla, sugar, whipping creme, and stir it up. Then you line the pan with brown sugar and pat it down.

Then you pack the pan with Texas toast, and pour over the mixture. I let it sit at least an hour, it's best if you can refrigerate it overnight. Then you put it in the oven for an hour. You know it's done when the custard isn't liquid anymore.
