Bourbon Sweet Potato Sorbet

Recipe:
· 8 oz pre-cooked sweet potatoes or canned yams
· 1/2 cup bourbon (good quality)
· 1 cup Corn syrup
· 1 cinnamon Stick
· 1/4 cup brown sugar
· 1/4 tsp nutmeg
· 1/4 tsp kosher salt
1. Add the sweet potatoes in a medium sized sauce pan and turn to medium high heat.
2. When the potatoes start to caramelize add the bourbon and reduce by half.
3. Add the remaining ingredients and bring to a simmer.
4. Remove the cinnamon stick and discard.
4. Remove the pot from the stove and puree the mixture with a food processor or stick blender.
5. Chill for 24 hours and mix the sorbet in your ice cream mixing attachment.
6. Serve soft or freeze over night with whipped cream and a fresh mint sprig.
