Blueberry Quinoa Salad
Serves 12
All you need:
2 cups water
1 cup quinoa
1 container fresh blueberries
4 oz reduced-fat feta cheese
1/3 cup chopped walnuts
½ cup fresh mint
½ cup fresh raspberries
Raspberry vinaigrette dressing
All you do:
1.     Bring 2 cups water to a boil, add quinoa, reduce heat and cook for 15 minutes. 
2.     In a separate bowl, combine berries, feta cheese, walnuts and mint. 
3.     Combine berry mixture with quinoa and drizzle dressing on top.
4.     Serve!
