Bacon Chicken and Green Beans

Three simple ingredients and a whole lot of flavor- from CoxHealth dietitian Donna Webb.
5 4-oz. boneless, skinless chicken breasts
5 cups fresh green beans, trimmed, cut
6 slices bacon

1.     Heat electric skillet 50 350.  Using kitchen scissors, cut each slice of bacon into 4 pieces.  Place all of bacon in electric skillet.  Cook bacon until it is crispy.  Remove bacon from skillet, leaving bacon fat.
2.    While bacon fat is still hot, place each chicken breast in skillet.  Brown chicken for 3 minutes.  Turn chicken over, to brown on the other side.  Continue to let chicken cook.
3.    Cover chicken in fresh green beans.  Add 1 inch of water to electric skillet.  Place cover on skillet.  Continuing cooking for 12-15 minutes, or until green beans can be cut easily with a fork.
4.    Remove chicken from skillet and serve with 1 cup of green beans.  Garnish with crisp bacon.
