Recipe: White Chocolate Buttermint Truffles
1 lb chopped white chocolate
½ stick salted butter melted
½ cup heavy whipping cream
1 teaspoon mint extract
1 /2 teaspoon butter flavor extract
Green food coloring
1 lb chopped white couverture chocolate melted & tempered for the coating
¼ lb chopped green colored chocolate melted and tempered for design
Green edible disco dust
Melt heavy whipping cream in sauce pan, bring just a simmer and pour over 1 lb chopped white chocolate. Cover and let sit for 5 min.
Uncover and gently stir with a whisk. Add melted butter. Add mint and butter extract. Add green food coloring to desired color. Gently stir and whisk. Set out to come to room temperature and then cover with plastic wrap. Gently lay plastic wrap on the surface of the truffle ganache. Let sit over night.
The next day. Remove plastic wrap and scoop one inch balls of buttermint ganache and roll into desired truffle balls. Melt and temper the remaining white and green chocolate. Dip the truffle balls into the melted white chocolate. Let dry and then drizzle the melted green chocolate over the white truffle balls. Sprinkle with green disco dust!
