Incredible Edible Algae

Item: This particular algae, Spirunlina, is a blue-green algae that has the nutrients of a full salad in a single spoonful—not to mention is packed with protein and vitamins while being virtually cellulose free. Our next superfood  could very likely be algae.

Why it Matters: As “homegrown” takes on new definitions and food costs continue to rise, people are looking for new and unique ways to become self-sustaining. Growing and eating algae is not the weirdest, but probably one of the more interesting (and healthy) ways to do it. Space saving, dependent on natural ambient resources, easily prepared, and easily stored. Maybe soon we won’t just hear about urban beekeeping or farming, but “metropolitan algae bars.”
