This rich and earthy chicken butter comes from Pearl & Ash, a restaurant on the Bowery in New York, where it is served with wonderful smoked bread. This spread is special because it combines seasoned, rendered chicken fat and sweet cream butter, along with a touch of maple syrup for a completely new way to experience fried chicken.
