Eating Pigs Head

The nose-to-tail food trend is getting stares from startled diners—and the food is staring back. Pigs Head is showing up on menus at some trendy restaurants from coast to coast, and it’s literally a whole head. Chefs are preparing some pig’s heads crispy, others braised—and once customers get over the idea of literally eating an animal’s face, they truly to enjoy it. 

Pig cheek is said to be some of the most tender and flavorful meat and is a hit among the mainstreamers. The more adventurous are going truly paleo, chowing down on the animal’s snout, ears and eyes.

First it was root-to-stalk vegetable eating, then came the idea of presenting the whole fish—so it’s only natural that we move to the whole body. As much of a shock as it is for some diners, others are finding it to be an exotic experience—something that you wouldn’t normally experience at an ordinary restaurant. Others are getting behind the trend for the flavor, savoring new meats and then telling their friends about the experience.
